BBQ Beef Brisket!!!


Beef, it's what was for Sundee Din-errr. This is totally a summer tradition in our house! I was makin' this classic since back in the dating days! Sheesh! Remember the BBQ Cluckin' Pizza from earlier in the week? Well, um...yeah I was a smarty-pants and made enough BBQ sauce for the brisket! Totally, thinkin' ahead, right? So, if you're genius too - follow my lead and make this guy-teaser-pleaser for your fam and more 'specially for your loverbuns. You'll pretty much have him in the palm of your hands.... got your pen and paper ready?

Ingredients

Brisket:
4 pounder beef brisket (look for a lean one with a fat layer on one side)
2 tablespoons liquid smoke
1 teaspoon crushed bay leaves
2 tablespoons chili powder
1 1/2 teaspoons black pepper
1 1/2 teaspoons salt

BBQ Sauce:

14 oz bottle ketchup (i use organic - it tastes richer and is healthierrr)
1/2 cup water
2 tablespoons liquid smoke
4 tablespoons worcestershire sauce
3 teaspoons dry mustard
2 teaspoons celery seeds
1/4 teaspoon cayenne
3 tablespoons brown sugar
6 tablespoons butter
salt and pepper (to taste)

Directions

Brisket: Combine dry seasonings. Rub meat completely with liquid smoke. Place meat, fat side up, in a large roasting pan or crock pot. Sprinkle dry seasoning on top and rub into meat. Cover tightly. Bake for 4 hours at 325 or in your crock pot on high for 4 hours. Scrape seasoning off meat and cut thinly across the grain. Serve with BBQ on crusty rolls or just by itself!

BBQ: Bring all ingredients to a boil on medium heat. Boil for 2 min. Turn to low until ready to serve.
