Kung Pao Chicken!!!
Want to add a lil' !POW! to your night? Try this kickin chicken dish! We loooove it! Loverbuns, begs for me to make it time n' time again!
Ingredients
1.5 lb boneless-skinless chicken breasts (cut into 1/4 inch pieces)
1 tablespoon cornstarch
2 teaspoons sesame oil
4 whole green onions, diced
3 cloves minced garlic
½ teaspoon crushed red pepper flakes (or more depending on heat desired)
½ teaspoon powdered ginger
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/2 cup peanuts
1 lemon (cut in wedges)
Directions
Heat sesame oil over medium heat, add the diced chicken and stir fry 5-7 minutes or until lightly browned. Add chopped peanuts and cook until the peanuts begin to turn color. Add the green onions, garlic, red pepper flakes and powdered ginger to the wok and stir fry for 15 seconds. Combine vinegar, soy sauce, sugar, and corn starch in a small bowl. Mix well with a whisk and add the sauce to the wok. Coat all ingredients with sauce. Squeeze some fresh lemon juice over chicken mixture and toss once over. Plate with brown rice. Top with additional green onions if desired and serve with a lemon wedge.
Note: Don't skip the lemon. It adds the right amount of kick to the dish!
