Donuts or Doughnuts?
Either way you spell it...these lil' guys are MONEY! They're not junky slash greasiness either bc they're totally BAKED! I know! Great huh? You can have your donut and your skinny ba-toot all at the same time. LOVE IT! Both your hubbykins and your pushin-cushion will thank you for goin' easy on the cals. This recipe makes 6. Here's how to make 'em n' bake 'em...
Ingredients
1 cup cake flour
1/4 unsweetened cocoa powder
1/2 t baking soda
1/2 cup low-fat buttermilk
1/2 cup packed dark-brown sugar
1 egg (room temp)
4 t melted butter
1 t good vanilla extract
Directions
Preheat oven to 325. Spray donut pan (I found mine at Sur La Table) with nonstick cooking spray. In a large bowl combine all dry ingredients and whisk them together. In a small bowl combine buttermilk, cooled melted butter, vanilla, and egg with a whisk until smooth. Add wet ingredients to the dry and whisk together just until blended and smooth. Spoon batter into a quart sized ziplock bag. Cut one corner and pipe the dough 2/3 full into each doughnut ring. Bake at 325 for 10-13 mins. until the doughnut spring back when lightly pressed. Cool in pan on a cooling rack for 3 minutes and then flip over to cool completely.
Chocolate Frosting
1 cup confectioners sugar
1 T unsweetened cocoa powder
2 T milk
salt to taste
Stir all ingredients together until smooth. Dip cooled doughnuts into the frosting and then let set on a cooling rack. Repeat dipping 1 time more but this time add toppings before letting set on the cooling rack. Top with sprinkles, chopped walnuts, toasted coconut, or mini chocolate chips. Hey let your creativity run wild!!

Can't wait to try these. I own a small coffee/wine bar and we make all of our own pastries. We are always having people request donuts but we do not have the ability to deep fry, so I am thrilled to try these. I ordered a couple of donut pans from Amazon.com so I will let you know how it goes. Thanks again!
